Years ago, he dipped a charred piece of bread into a rich gravy that soaked each crumb like a sponge. He raised it to his mouth and closed his eyes, and that is where his journey began.
Chef Keith is a 5x author, restauranteur, and public speaker who grew up in a small city in New Hampshire in the United States. Growing up in kitchens, he learned how to cook from many amazing western chefs. Each chef would impart the knowledge passed down to them by their mentors. It wasn’t until much later in life that he would try his first bite of Indian food. He began learning under an Indian home cook and went on to study with food archeologists and historians from across India.

You became half Indian the moment you wore the Indian team cap
Friend....cooked..grilled food on street is ok.
Whites ..or foreigners MUST avoid street food. Even 5 star hotels may not have hygeniec culture. So be attentive yourself. My rules ( I am an Indian in <Norway>) 1. No vegetable..fruit unless grilled cooked. 2. Carbonated/water is safe. 3. Use utensils. No fingers.. 4. Tap water is hell
I think u should make a list of indian foods that u have tried, and another list of indian dishes that was recommended to u that u shd try and havent had opportunity to try it. Ex: You might have had Biryani from Delhi, Mumbai, and Hydrabad. Which one was your favorite and why?? This is something good for record keeping and for videos. Everyone would enjoy watching it. Ty.

U have to try "Kitchri", Poor man's feast. When made with correct blend of spices, and eating with Mango Pickle, it can challenge and defeat any dish put front of it. Seriously it can. Also excellent Pani Puri is hard to find, but if u do, it can challenge any snack items. Thank you.

I love appe .. being Indian maharashtrian we make it using mix of different kind of pulses and rice .. it’s healthy and tasty .. but we need to make sure quantity of mixed pulses should be equal to rice quantity.. eat it with coconut chutney .. yummy … Thank you, you love Indian food .. next time please visit Odisha, West Bengal, Punjab and Rajasthan . You will be amazed with the food experience

It's true that there is a lot of unhygenic food here that even we steer clear of.. it's a big big country of 140 crore man... What do you expect? 😂😂 However.. there is some goooddd street food out here that gets sold out in like 3-4 hours.. and then that guy goes home makes the ingredients and shows up again the next day with the same result!! 🤷

True man in India we eat street food rather then eat at restaurants as street food are more hygienic as they make new everyday and restaurants use frozen food or kept old food and sell it next days that's why are also healthier after eating everyday at local and still no illnesses also even in the covid pandemic India has least percent people affected

Keith, Thank you for making this Post, specially coming from a native like you, as I have to answer all the question you have proposed, I do my part by cooking for my daughter and her friends, as they say one convert at a time, Indian food is healthy, as it is mostly plant based, and renewable unlike animal based which is popular in the west, but destroys the resources of the Plant!.

To be honest, I've had much better dosas. But for me, what makes this Dosa Man's cart special is that I can eat a Jaffna Variation of the DOsa, with a slightly subtle difference in taste compared to what you'd get in Madurai or Chennai - and you can do it all, while you're in the middle of NYC, outdoors, in a park. That's what makes it special.
